    Prepare the Egusi Mixture

    In a bowl, blend the egusi seeds to a fine powder. Mix with a little water to form a thick paste and set aside.

    Cook the Protein

    In a pot, heat the palm oil over medium heat. Add the chopped onion and sauté until translucent. Add the tilapia (or chicken/beef) and cook until browned on all sides. Remove and set aside.

    Make the Soup Base

    In the same pot, add the egusi paste. Stir well and let it cook for about 5-10 minutes, stirring occasionally to prevent burning.

    Combine Ingredients

    Add the water gradually, stirring to combine. Add the cooked protein back into the pot. Add the chopped scotch bonnet pepper, seasoning cubes, and salt. Cook on low heat for about 20 minutes.

    Add Vegetables

    Finally, add the vegetable of your choice and cook for an additional 5-10 minutes until the vegetables are tender. Adjust seasoning as needed.

    Serve hot with a side of fufu or rice.
