    Prepare the Egusi Paste

    Blend the egusi seeds into a fine powder. Then mix it with a little water to form a thick paste.

    Cook the Fish/Meat

    In a large pot, add the palm oil and heat it. Add chopped onions and sauté until translucent. If using meat, add it now and cook until tender.

    Add Vegetables

    Add chopped bell pepper and scotch bonnet pepper. Stir well and let it cook for a few minutes.

    Combine Egusi Paste

    Add the egusi paste to the pot and mix well. Pour in the vegetable or chicken broth and stir to combine.

    Season the Soup

    Add seasoning cubes and salt to taste. Let the soup simmer for about 20 minutes, stirring occasionally.

    Add Greens

    Finally, add spinach or bitter leaf to the pot and cook for an additional 5 minutes until the greens are wilted.

    Serve

    Serve the egusi soup hot with a side of your choice of tilapia fish, chicken, or beef.
