    Prepare the Base

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.

    Add Aromatics

    Add the minced garlic and ginger and cook for an additional 2 minutes until fragrant.

    Tomato Mixture

    Stir in the blended tomatoes and red bell peppers. Cook for about 15-20 minutes, stirring occasionally, until the mixture reduces and thickens.

    Add Seasonings

    Add the thyme, bay leaves, salt, and black pepper to the tomato mixture. Stir well.

    Combine Rice and Broth

    Add the rinsed rice to the pot and stir to coat it with the tomato mixture. Pour in the chicken or vegetable broth. Bring to a boil.

    Cook the Rice

    Once boiling, reduce the heat to low, cover the pot, and simmer for about 30-35 minutes, or until the rice is cooked and has absorbed the liquid.

    Once the rice is cooked, gently fold in the diced carrots and green peas. Cover and cook for an additional 5-10 minutes.
