Mochi Dough Preparation

    Mix Ingredients

    In a large microwave-safe bowl, combine the sweet rice flour (Mochiko) and granulated sugar. Stir well to combine.

    Add Water

    Gradually add the water to the mixture, stirring continuously until you achieve a smooth batter.

    Microwave the Mixture

    Cover the bowl with plastic wrap (leaving a small vent) and microwave on high for 1 minute. Remove and stir, then cover and microwave for another 1 minute. Repeat this process one more time, cooking for a total of 3 minutes, stirring in between until the mixture is sticky and slightly translucent.

    Cool the Dough

    Let the mochi dough cool for about 15 minutes until it's manageable to touch.

Assembling Mochi Ice Cream

    Dust Surface

    Sprinkle cornstarch on a clean surface to prevent the mochi from sticking.

    Form Mochi Pieces

    Once cool, transfer the mochi dough onto the dusted surface. Divide the dough into 8 equal portions. Flatten each portion into a circle about 3 inches in diameter.

    Add Ice Cream Scoop

    Scoop a small amount of ice cream (about 1 tablespoon) and place it in the center of each mochi circle.

    Wrap the Ice Cream

    Carefully fold the edges of the mochi circle over the ice cream to seal it completely, pinching the edges together to ensure no ice cream is exposed.

    Freeze Mochi

    Place the filled mochi on a parchment-lined baking sheet and freeze for at least 2 hours to set.
