Samosas Green Lentils Recipe
A house favorite. Made of flaky dough filled with sautéed lentils, carrots, and potatoes. Fried crispy and served with our Akadi Sauce.

Prepare the Filling
In a pot, cook green lentils in salted water until tender, about 20 minutes. Drain and set aside.

In a skillet, heat a tablespoon of oil over medium heat. Add cumin seeds and sauté until fragrant.

Add cooked lentils, coriander powder, turmeric powder, salt, and black pepper. Mix well and cook for an additional 5 minutes. Remove from heat and let cool.

Make the Dough
In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 tsp of salt, and enough water to form a smooth, firm dough. Let it rest for 30 minutes.

Assemble the Samosas
Divide the dough into small balls. Roll each ball into a thin circle, cut in half, and shape into a cone.

Fill the cone with the lentil mixture and seal the edges with a little water.

Fry the Samosas
Heat oil in a deep frying pan over medium heat. Fry the samosas in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels.

Serve hot with Akadi Sauce.
