Chicken thighs marinated in our ginger garlic sauce, grilled and served with tomato and onion relish, mustard sauce, hot chili sauce.
In a large bowl, combine ginger garlic paste, olive oil, lemon juice, salt, and black pepper. Add the chicken thighs and coat them well in the marinade. Cover and refrigerate for at least 1 hour, or preferably overnight for best flavor.
While the chicken is marinating, prepare the tomato and onion relish. Dice 2 ripe tomatoes and 1 medium onion. Mix them in a bowl with a pinch of salt, a squeeze of lemon juice, and some chopped cilantro if desired. Set aside.
Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.
Once grilled, let the chicken rest for a few minutes. Serve hot with the prepared tomato and onion relish, alongside mustard sauce and hot chili sauce for dipping.
