Cooking Instructions

  1. 1

    Prepare the Ingredients

Start by cleaning and cutting the goat meat into large chunks. Chop the onion, garlic, ginger, carrots, and potato into bite-sized pieces.

  2. 2

    Sauté the Aromatics

In a large pot, add a little oil and sauté the chopped onions, garlic, and ginger over medium heat until the onions are translucent.

  3. 3

    Brown the Goat Meat

Add the goat meat to the pot and cook until browned on all sides.

  4. 4

    Add the Vegetables and Spices

Stir in the carrots, potato, habanero peppers, bay leaves, thyme, salt, and black pepper. Mix well.

  5. 5

    Pour in the Water

Add the water to the pot, making sure all the ingredients are submerged. Bring to a boil.

  6. 6

    Simmer the Soup

Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours or until the goat meat is tender.

  7. 7

    Add Spinach

In the last 10 minutes of cooking, add the spinach to the pot and stir until wilted.

  8. 8

    Serve

Adjust seasoning to taste, then serve hot with rice, fufu, or ebba.
