Preparation

  1. 1

    Prepare the Meats

Cut the steak into bite-sized pieces. Slice the chorizo and morcilla into thick rounds.

  2. 2

    Cook the Yuca and Plantain

Peel and chop the yuca into chunks. Boil in salted water until tender, about 20 minutes. For the plantain, peel and slice diagonally, then fry in a skillet until golden brown.

  3. 3

    Cook the Meats

In a hot grill or skillet, cook the steak pieces, chorizo, morcilla, and pork rinds until well-browned and cooked through. Cook the steak for about 4-5 minutes on each side.

  4. 4

    Prepare the Arepas

Cook the arepas on a hot griddle or skillet until golden brown and heated through, about 5-7 minutes per side.

Serving

  1. 5

On a large platter, arrange the cooked meats, yuca, fried plantain, and arepas.

  2. 6

Serve with chimichurri and aji sauce on the side. Squeeze fresh lemon juice over the dish before serving.
