    Prepare the Meat Mixture

    In a large bowl, combine the ground pork, pork fat (if using), paprika, minced garlic, cumin, oregano, black pepper, salt, and red wine vinegar. Mix well until all ingredients are evenly incorporated.

    Stuff the Sausages

    Rinse the hog casings thoroughly in cold water. Soak them in water for about 30 minutes before using. Fit a sausage stuffer with the soaked casing and fill it with the meat mixture, being careful not to overstuff. Tie off the ends of the casing.

    Cook the Chorizo

    You can either grill, pan-fry, or bake the sausages until they reach an internal temperature of 160°F (70°C). This typically takes about 15-20 minutes, depending on the cooking method.

    Serve

    Let the chorizo rest for a few minutes before slicing and serving. Enjoy with your favorite sides or in dishes like tacos, sandwiches, or on their own.
