Sauté Vegetables
In a large paella pan or skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sauté until the onions are translucent.

Add Rice and Seasonings
Stir in the basmati rice, thyme, salt, and pepper. Cook for about 2 minutes, allowing the rice to absorb the flavors.

Deglaze with Wine
Pour in the white wine, stirring well to deglaze the pan. Allow the wine to reduce for about 2-3 minutes.

Add Broth and Seafood
Pour in the vegetable broth and bring to a simmer. Add the seafood mix and gently stir to distribute evenly.

Cook the Paella
Reduce heat to low, cover, and let it cook for about 15-20 minutes until the rice is tender and the seafood is cooked through.

Once the paella is cooked, remove from heat and let sit for a few minutes. Serve hot with the fried plantains on the side.
