1. Prepare the Chicken
In a large pot, heat the olive oil over medium heat. Season the chicken thighs with salt and black pepper. Add the chicken to the pot and brown on all sides, about 5-7 minutes. Remove the chicken and set aside.
2. Sauté Vegetables
In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent. Then, stir in the diced carrots, chopped green beans, and peas. Cook for another 5 minutes.
3. Combine Ingredients
Add the hogao to the pot and stir well. Then, add the rice and mix until the rice is coated with the sauce. Pour in the chicken broth and bring to a boil.
4. Cook the Rice
Return the browned chicken to the pot. Reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the rice is cooked and has absorbed all the liquid.
5. Fry the Plantains
While the rice is cooking, peel and slice the ripe plantains. In a skillet, heat a little oil over medium heat and fry the plantain slices until golden brown on both sides. Remove and drain on paper towels.
