    Prepare the Patacones

    Peel the green plantains and cut them into 1-inch thick slices.

    Fry the Plantains

    In a large skillet, heat the vegetable oil over medium heat. Add the plantain slices and fry until they are golden, about 3-4 minutes on each side. Remove from the oil and drain on paper towels.

    Smash the Plantains

    Using the bottom of a glass or a flat surface, gently smash each fried plantain slice to form a disc.

    Fry Again

    Return the smashed plantains to the hot oil and fry for another 2-3 minutes until crispy. Drain on paper towels and sprinkle with salt.

    Make the Hogao Sauce

    In a separate pan, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until soft.

    Add Vegetables

    Add the chopped tomatoes and green bell pepper to the pan, season with salt and black pepper. Cook until the tomatoes break down, about 5-7 minutes.

    Finish the Sauce

    Stir in the chopped cilantro and cook for an additional 2 minutes.

    Serve

    Serve the crispy patacones hot with the hogao sauce on top or on the side.
