    Make the Dough

    In a large bowl, combine the all-purpose flour, unsalted butter, and salt. Mix until the mixture resembles coarse crumbs. Gradually add water, mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a medium bowl, mix together the cheddar cheese, mozzarella cheese, and cream cheese until well combined.

    Roll Out the Dough

    After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball out on a floured surface until thin (about 1/8 inch thick).

    Assemble the Empanadas

    Place a spoonful of the cheese mixture in the center of each dough circle. Brush the edges with beaten egg, fold over, and seal by pressing with a fork.

    Cook the Empanadas

    Heat a skillet over medium heat with a little oil. Fry the empanadas for about 2-3 minutes on each side or until golden brown. Alternatively, you can bake them at 375°F (190°C) for 20-25 minutes.
