    Prepare the Steak

    Season the rib eye steaks with salt and black pepper on both sides. Heat a skillet over medium-high heat and add olive oil. Once hot, add the steaks and cook for 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from heat and let rest for 5 minutes.

    Prepare the Arepas

    If using pre-made arepas, heat them according to package instructions. If making from scratch, combine 2 cups of pre-cooked cornmeal, 2 cups of warm water, and a pinch of salt. Form the dough into patties and cook on a hot griddle for about 5-7 minutes on each side until golden brown.

    Prepare the Salad

    Chop the tomato and cucumber into bite-sized pieces. In a bowl, combine mixed salad greens, tomato, and cucumber. Drizzle with olive oil and toss gently.

    Assemble the Dish

    On each plate, place a rib eye steak, a couple of arepas, a serving of cooked rice, and a portion of salad. Drizzle chimichurri sauce over the steak and serve extra on the side.
