    Prepare the Broth

    In a large pot, combine the chicken pieces and water. Bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer for about 30 minutes, skimming any foam that rises to the surface.

    Add Vegetables

    Add the corn pieces, diced potatoes, guasca, salt, and black pepper to the pot. Continue to simmer for another 30-40 minutes, or until the chicken is cooked through and the potatoes are tender.

    Shred the Chicken

    Remove the chicken pieces from the pot and let them cool slightly. Shred the chicken into bite-sized pieces and return it to the pot.

    Serve

    Ladle the soup into bowls. Top each serving with a drizzle of heavy cream and a sprinkle of capers. Serve with a side of rice and sliced avocado.
