Grill the Pineapple

Preheat a grill or grill pan over medium heat. Slice the peeled and cored pineapple into thick rings. Grill each ring for about 3-4 minutes on each side, or until grill marks appear and the pineapple is slightly caramelized. Remove from the grill and let cool.

Juice the Pineapple

Once the grilled pineapple has cooled, cut it into smaller pieces and blend them in a blender until smooth. Strain the juice through a fine mesh sieve into a bowl to remove any pulp.

Combine the Ingredients

In a serving glass, add ice cubes to your desired amount. Pour in the grilled pineapple juice until the glass is about half full. Top with club soda, stirring gently to combine.

Garnish and Serve

Use a vegetable peeler to cut a strip of orange peel. Twist it over the drink to release its oils and drop it into the glass as a garnish. Serve immediately and enjoy your refreshing Sol de Mayo!
