Prepare the Filling
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add chopped onion, bell pepper, and minced garlic, sautéing until the vegetables are soft, about 5 minutes. Stir in the cooked rice, chopped parsley, salt, black pepper, and red pepper flakes. Mix well and remove from heat.
Stuff the Squid
Using a spoon, carefully fill each squid tube with the rice mixture, leaving some space at the top. Secure the ends with toothpicks or kitchen twine.
Prepare the Sauce
In the same skillet, add the remaining tablespoon of olive oil and heat. Pour in the crushed tomatoes and white wine. Bring to a simmer, stirring occasionally.
Cook the Stuffed Squid
Gently place the stuffed squid into the sauce. Cover and cook on low heat for about 20 minutes, or until the squid is tender.
Serve
Remove the toothpicks or twine from the squid. Serve the stuffed lulas hot, drizzled with the Mediterranean sauce.
