- 2
Sauté the Vegetables
In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion, green bell pepper, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
- 3
Toast the Rice
Add the rice to the skillet and stir for about 2-3 minutes until the rice is lightly toasted.
- 4
Add Liquids and Seasonings
Pour in the vegetable broth, tomato sauce, and add the cumin, chili powder, salt, and pepper. Stir to combine.
- 5
Cook the Rice
Bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
- 6
Add Beans and Corn
Once the rice is cooked, gently fluff it with a fork. Stir in the black beans and corn, cooking for an additional 5 minutes until warmed through.
- 7
Finish with Cilantro
Remove from heat and stir in the chopped cilantro. Adjust seasoning if necessary.
- 8
Serve
Serve hot as a side dish or as a main dish with your favorite protein.
