    Prepare the Beans

    Rinse the pinto beans under cold water and soak them in water for at least 4 hours or overnight. Drain and set aside.

    Cook the Pork

    In a large pot, heat olive oil over medium heat. Add the diced pork shoulder and cook until browned, about 6-8 minutes. Remove the pork and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Add Tomatoes and Spices

    Add the diced tomatoes, cumin, chili powder, salt, and black pepper to the pot. Stir and cook for 2-3 minutes.

    Combine Ingredients

    Return the browned pork to the pot, add the soaked beans, and pour in the chicken broth. Bring to a boil.

    Simmer

    Reduce heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beans are tender.

    Finish the Dish

    Once cooked, stir in the chopped cilantro and lime juice. Adjust seasoning if needed.

    Serve the charro beans hot, optionally with additional lime wedges and cilantro on top.
