Make the Bavarian Cream Filling

Prepare the Cream
In a saucepan, combine milk, heavy cream, sugar, and vanilla extract. Heat over medium heat until steaming but not boiling.

Whisk Egg Yolks
In a separate bowl, whisk egg yolks and cornstarch until smooth. Slowly pour in the hot milk mixture while whisking constantly.

Incorporate Eggs
Let the dough cool slightly, then add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Fry the Churros

Heat the Oil
In a deep pan, heat oil to 350°F (175°C).

Pipe the Dough
Transfer the dough to a piping bag fitted with a star tip. Pipe strips of dough into the hot oil, frying until golden brown.

Using a filling tip, inject the cooled Bavarian cream into each churro.
