Green Chicken Enchiladas Recipe

    Prepare the Chicken and Ingredients

    If you haven't done so already, braise the chicken until tender, then shred it. Preheat your oven to 375°F (190°C).

    Prepare the Tortillas

    In a skillet, heat the olive oil over medium heat. Lightly fry each tortilla for about 30 seconds on each side until soft and pliable. Remove and set aside.

    Assemble the Enchiladas

    Spread a little green enchilada sauce on the bottom of a baking dish. Take a tortilla, fill it with shredded chicken and some Oaxacan cheese, roll it up, and place it seam-side down in the baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Pour the remaining green enchilada sauce over the rolled tortillas. Sprinkle the rest of the Oaxacan cheese on top.

    Bake the Enchiladas

    Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

    Serve

    Remove from the oven and let cool for a few minutes. Serve warm, garnished with fresh cilantro, and accompanied by charro beans and Mexican rice on the side. Add sour cream on top if desired.
