Cook the Chorizo
In a skillet over medium heat, cook the chorizo until browned and cooked through. Drain any excess fat.

Prepare the Filling
In a bowl, combine the cooked chorizo, chopped green onions, minced garlic, and cream cheese. Mix well until fully combined.

Fill the Eggrolls
Lay out an eggroll wrapper and place about 2 tablespoons of the filling in the center. Fold the sides over the filling and roll tightly, sealing the edges with a little water.

Fry the Eggrolls
Heat the oil in a deep skillet or fryer to 180°C (350°F). Fry the eggrolls in batches until golden brown and crispy, about 3-4 minutes. Drain on paper towels.

Prepare the Sauce
In a small bowl, mix together the Dijon mustard and horseradish sauce to create a dipping sauce.

Serve
Serve the hot chorizo eggrolls with chimichurri sauce and the Dijon horseradish dipping sauce.
