Method

Buddha Bowl Directions

  1. 1

    Cook the Quinoa

In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and set aside.

  2. 2

    Prepare the Vegetables

Wash and chop the seasonal vegetables into bite-sized pieces. You can steam or sauté them lightly in a pan with a tablespoon of olive oil until just tender.

  3. 3

    Assemble the Bowl

In a large bowl, layer the cooked quinoa at the bottom. Add the chickpeas and the prepared vegetables on top.

  4. 4

    Add Avocado

Slice the avocado in half, remove the pit, and scoop out the flesh. Slice it and arrange it on top of the bowl.

  5. 5

    Dress the Bowl

Drizzle the remaining olive oil and lemon juice over the bowl. Season with salt and black pepper to taste. Sprinkle sesame seeds on top if desired.

  6. 6

    Serve

Enjoy your nourishing Buddha Bowl immediately or store it in the fridge for later.
