Toast Rice
Add the rice to the saucepan, stirring to coat it in the oil. Cook for another 2-3 minutes until the rice is slightly toasted.
- 3
Cook Rice
Add the water, turmeric, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and water is absorbed.
Making the Pico de Gallo
- 4
Mix Pico de Gallo
In a bowl, combine diced tomatoes, red onion, chopped cilantro, lime juice, and salt. Mix well and set aside to allow flavors to meld.
Preparing the Crema
- 5
Make Crema
In a small bowl, whisk together sour cream, lime juice, and salt until smooth. Set aside.
Preparing the Filling
- 6
Select Filling
Choose your filling option (Chicken Tinga, Carnitas, Chorizo, or Shrimp) and ensure it is cooked and ready to use.
Assembling the Burritos
- 7
Add Rice
Lay a large flour tortilla flat on a clean surface. Place 1/4 of the golden rice in the center of the tortilla.
- 8
Add Filling and Toppings
Top the rice with 1/2 cup of your chosen filling, followed by a handful of shredded lettuce, and a spoonful of pico de gallo.
- 9
Add Crema and Cheese
Drizzle the crema over the top, and sprinkle with shredded cheese if desired.
- 10
Roll Burrito
Fold the sides of the tortilla over the filling, then roll from the bottom to the top to form a burrito. Repeat with remaining tortillas and filling.
