Method

Preparing the Shrimp

    Marinate the Shrimp

    In a medium bowl, combine the olive oil, lime juice, tequila, minced garlic, cumin, chili powder, salt, and black pepper. Add the shrimp, ensuring they are well coated in the marinade. Cover and refrigerate for 15-30 minutes.

    Cook the Shrimp

    Preheat a grill or skillet over medium-high heat. Remove the shrimp from the marinade and grill or sauté for 2-3 minutes on each side, or until they are opaque and cooked through. Set aside.

Making the Roasted Corn Salsa

    Roast the Corn

    If using fresh corn, grill the corn on a grill or roast in the oven until slightly charred. If using frozen corn, sauté in a skillet until heated through and slightly caramelized.

    Combine Salsa Ingredients

    In a large bowl, combine the roasted corn, diced red onion, cherry tomatoes, minced jalapeño, chopped cilantro, and lime juice. Season with salt to taste. Mix well and set aside to let the flavors meld.

Assembling the Dish

    Plate the Dish

    On a serving platter or individual plates, layer the cooked shrimp and top generously with the roasted corn salsa.

    Add Garnish

    Sprinkle crumbled cotija cheese over the shrimp and salsa, and garnish with additional fresh cilantro as desired.
