Crust Preparation

    Prepare the crust

    In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

    Press into pan

    Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Use the back of a measuring cup for even pressure.

    Bake the crust

    Preheat the oven to 350°F (175°C). Bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let it cool.

Filling Preparation

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

    Add sugar and sour cream

    Gradually add the granulated sugar and sour cream, mixing until fully incorporated. Ensure there are no lumps.

    Add vanilla and eggs

    Add the vanilla extract and eggs, one at a time, mixing well after each addition.

    Incorporate seasonal fruit puree

    Fold in the seasonal fruit puree gently until just combined.

    Pour into crust

    Pour the filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Baking

    Bake the cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center is slightly jiggly.

    Cool the cheesecake

    Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour. This prevents cracking.

    Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight for best results.

    If desired, whip the heavy cream until soft peaks form. Use it to top the cheesecake along with seasonal fruit.
