    Wash and Cut Potatoes

    Wash the Russet potatoes thoroughly under cold water to remove any dirt. Cut each potato into wedges, about 1 inch thick.

    Soak Potatoes

    Place the cut potato wedges in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will make the fries crispier.

Cooking

    Preheat Oven

    Preheat your oven to 425°F (220°C) to ensure it's nice and hot for baking the fries.

    Dry and Season Potatoes

    After soaking, drain the potato wedges and pat them dry with a clean kitchen towel. In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, dried oregano, salt, and black pepper. Add the potato wedges to the bowl and toss until they are evenly coated with the seasoning mix.

    Spread the seasoned potato wedges in a single layer on a baking sheet lined with parchment paper. Make sure they are not overcrowded to ensure even cooking.
