Method

Bean Preparation

  1. 1

    Soak Beans

Rinse the dried pinto beans under cold water to remove any dirt or debris. Place them in a large bowl, cover with water, and let soak overnight or for at least 6 hours.

  2. 2

    Cook Beans

After soaking, drain and rinse the beans. In a large pot, combine the soaked beans and 4 cups of fresh water. Bring to a boil over high heat, then reduce the heat to low and simmer for about 1.5 to 2 hours, or until the beans are tender.

Aromatics and Seasoning

  1. 3

    Sauté Aromatics

While the beans are cooking, finely chop the onion, garlic cloves, and jalapeño pepper. In a skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Then add garlic and jalapeño, cooking for an additional 2-3 minutes until fragrant.

  2. 4

    Season the Mixture

Once the aromatics are cooked, add cumin, salt, and black pepper to the skillet. Stir to combine and cook for another minute to toast the spices.

Combining and Mashing

  1. 5

    Combine Beans and Aromatics

Once the beans are tender, drain any excess liquid and add them to the skillet with the sautéed aromatics and seasonings. Stir to combine and cook for about 5 minutes over medium heat, allowing the flavors to meld.

  2. 6

    Mash the Beans

Using a potato masher or fork, mash the beans to your desired consistency. If the mixture seems too thick, add a bit of reserved bean cooking liquid or water to reach your preferred texture.

  3. 7

    Finish with Lime Juice

Stir in the lime juice to add brightness to the refried beans. Adjust seasoning with additional salt and pepper to taste.

Serving Suggestions

  1. 8

    Serve Warm

Transfer the refried beans to a serving dish and top with optional shredded cheese, sour cream, and fresh cilantro before serving. Enjoy warm as a side dish or in tacos, burritos, or enchiladas.
