Prepare the Beef Patty

Mix the Beef
In a large bowl, combine the ground beef, salt, black pepper, and garlic powder. Mix until just combined, being careful not to overwork the meat.

Form the Patties
Divide the beef mixture into two equal portions and shape each portion into an 8 oz patty, making a slight indent in the center with your thumb to help cook evenly.

Assemble the Burger

Add Cheese
During the last minute of cooking, place a slice of pepper jack cheese on each patty to melt.

Toast the Buns
While the cheese is melting, place the brioche buns on the grill for about 1-2 minutes until they are lightly toasted.

Build the Burger
Spread a generous amount of guacamole on the bottom half of the toasted brioche bun. Place the cooked patty with melted cheese on top, followed by a scoop of pico de gallo and a handful of lettuce. Finish with the top half of the bun.
