Method
Chips
- 1
Prepare the tortillas
Cut each corn tortilla into 6 wedges using a sharp knife or pizza cutter.
- 2
Heat the oil
In a large frying pan, heat the vegetable oil over medium-high heat until it's hot but not smoking.
- 3
Fry the chips
Carefully add the tortilla wedges to the hot oil in batches; do not overcrowd the pan. Fry for about 2-3 minutes, turning occasionally, until they are golden brown and crispy.
- 4
Drain the chips
Using a slotted spoon, remove the fried chips from the oil and transfer them to a plate lined with paper towels to drain excess oil. Sprinkle with salt while they are still hot.
Salsa

- 6
Mix the salsa
In a medium bowl, combine the chopped tomatoes, onion, jalapeño, and cilantro. Add the lime juice and salt, mixing well to combine all the ingredients.
- 7
Taste and adjust
Taste the salsa and adjust the seasoning, adding more salt or lime juice if desired.
- 8
Chill before serving
Let the salsa sit for at least 15 minutes at room temperature to allow the flavors to meld before serving.
