Preparation of Mascarpone Mixture

  1. 1

    Separate the Eggs

Separate the egg yolks from the egg whites into two different bowls.

  2. 2

    Whip the Egg Whites

Using an electric mixer, whip the egg whites until stiff peaks form.

  3. 3

    Mix Egg Yolks and Sugar

In another bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy.

  4. 4

    Add Mascarpone

Gently fold in the mascarpone cheese into the egg yolk mixture until well combined.

  5. 5

    Fold in Egg Whites

Carefully fold the whipped egg whites into the mascarpone mixture until no white streaks remain.

  6. 6

    Whip the Heavy Cream

In a separate bowl, whisk the heavy cream until soft peaks form and then fold it gently into the mascarpone mixture.

Preparation of Coffee Mixture

  1. 7

    Brew Espresso

Brew 200 ml of strong espresso coffee and let it cool slightly.

  2. 8

    Mix with Liqueur

If using, add the coffee liqueur to the espresso and stir to combine.

Layering Tiramisu

  1. 9

    Dip Ladyfingers

Quickly dip each ladyfinger biscuit into the coffee mixture, ensuring they are soaked but not soggy.

  2. 10

    Layer in Dish

Arrange a layer of soaked ladyfingers in the bottom of a rectangular dish.

  3. 11

    Add Mascarpone Mixture

Spread half of the mascarpone mixture over the layer of ladyfingers.

  4. 12

    Repeat Layers

Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.

  5. 13

    Chill

Cover the dish and refrigerate for at least 4 hours, preferably overnight for best flavor.

  6. 14

    Dust with Cocoa

Before serving, dust the top of the tiramisu with cocoa powder using a fine sieve.
