Method

Preparation

  1. 1

    Combine Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until well combined.

  2. 2

    Mix Wet Ingredients

In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

Cooking

  1. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients, and gently stir until just combined. Be careful not to overmix; the batter should be a bit lumpy.

  2. 4

    Preheat Griddle

Heat a non-stick griddle or skillet over medium heat. Lightly grease with butter or cooking spray.

  3. 5

    Cook Pancakes

Using a 1/2 cup measuring cup, pour batter onto the griddle for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.

  4. 6

    Serve

Serve warm with optional fresh fruit or chocolate chips, if desired. Enjoy!
