Main Ingredients

Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillet in a shallow dish and pour the marinade over it. Ensure the salmon is evenly coated. Cover and marinate in the refrigerator for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F). If using a charcoal grill, allow the coals to burn down until they are covered with white ash.

  3. 3

    Grill the Salmon

Remove the salmon from the marinade and let the excess drip off. Place the salmon skin-side down on the grill. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Use a spatula to carefully flip the salmon halfway through cooking.

Preparing the Vegetable Side

  1. 4

    Prepare the Vegetables

In a large bowl, combine asparagus, bell pepper, and zucchini. Drizzle with olive oil, and season with salt and black pepper. Toss to coat the vegetables evenly.

  2. 5

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 4-5 minutes, turning occasionally, until tender and slightly charred.

Serving

  1. 6

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon alongside the grilled vegetables on a plate. Optionally, garnish with fresh herbs or lemon wedges.
