    Prepare the Superfly Adobo Aioli

    In a small bowl, combine mayonnaise, chipotle powder, garlic powder, lime juice, salt, and black pepper. Mix well and set aside.

    Cook the Beef Patties

    Divide the ground beef into two equal portions and shape them into patties. Season both sides with salt and black pepper. Heat a griddle or skillet over medium-high heat and cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.

    Add Cheese and Chilies

    In the last minute of cooking, place a slice of pepper jack cheese on each patty and add the roasted hatch chilies on top. Cover with a lid to help the cheese melt.

    Assemble the Burger

    Toast the burger buns on the griddle or skillet. Spread a generous amount of the superfly adobo aioli on the bottom half of each bun. Place a patty with melted cheese and chilies on top, followed by a layer of pickles. Top with the other half of the bun.

    Serve the burgers hot with your favorite side dishes.
