Prepare the Beef Patties
In a bowl, combine the ground beef, salt, and black pepper. Form the mixture into two equal-sized patties.

Grill the Patties
Preheat a griddle or frying pan over medium-high heat. Cook the beef patties for about 3-4 minutes on each side or until they reach your desired doneness.

Add Cheese
In the last minute of cooking, place two slices of Swiss cheese on each patty and cover to melt the cheese.

Prepare the Bread
While the cheese is melting, spread butter on one side of each slice of rye bread.

Assemble the Patty Melt
On the non-buttered side of two slices of rye bread, layer the sauerkraut, cooked patties with melted cheese, and a generous amount of Russian dressing. Top with pickles, then place the remaining slices of rye bread on top, buttered side up.

Griddle the Sandwich
Place the assembled sandwiches on the griddle. Cook for about 3-4 minutes on each side or until the bread is golden brown and crispy.

Serve
Remove from the griddle, slice in half if desired, and serve hot with extra pickles and Russian dressing on the side.
