Prepare the Dough
In a large bowl, combine warm water, brown sugar, and yeast. Let it sit for about 5 minutes until foamy. Add in the flour and salt, mixing until a dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Shape the Pretzel
Preheat your oven to 450°F (230°C). Once the dough has risen, punch it down and divide it into two equal parts. Roll each part into a long rope (about 24 inches) and twist into a pretzel shape.
Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove with a slotted spoon.
Bake the Pretzel
Place the pretzels on a parchment-lined baking sheet. Brush each with the beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes until golden brown.
