Cook the Meat

In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.

Sauté the Vegetables

Add chopped onion and minced garlic to the pot with the beef. Sauté until the onion is translucent, about 5 minutes.

Combine Ingredients

Stir in the tomato sauce, kidney beans, beef broth, chili powder, cumin, cocoa powder, cinnamon, bay leaves, salt, black pepper, and sugar.

Simmer the Chili

Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for at least 30 minutes to allow the flavors to meld. Stir occasionally.

Adjust Seasonings

Taste the chili and adjust seasonings as necessary. Add hot sauce to taste if desired.

Serve

Remove bay leaves before serving. Serve hot in cups or bowls.
