Fries Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into evenly sized strips, approximately 1/4 inch thick.

    Soak the Potatoes

    Place the potato strips in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the potatoes and pat them dry with paper towels to remove excess moisture.

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
