    Soak the natural sheep casings in cold water for at least 30 minutes. Rinse them thoroughly under cold running water to remove any excess salt.

    Mix the Meat

    In a large mixing bowl, combine ground beef and ground lamb. Add minced garlic, paprika, cumin powder, black pepper, salt, and red pepper flakes to the meat mixture. If using, add chopped parsley and smoked paprika for extra flavor.

Stuffing the Sausages

    Prepare the Sausage Stuffer

    Fit a sausage stuffer with the rinsed sheep casings. Ensure the casing is properly attached and there are no air pockets.

    Stuff the Casings

    Carefully stuff the casings with the meat mixture, making sure to pack it tightly but not overly so to prevent bursting. Tie off the ends of the sausages with kitchen twine.

Cooking

    Cook the Sudzuk

    You can grill, pan-fry, or bake the sudzuk. If grilling, preheat the grill to medium-high heat and cook the sausages for about 15-20 minutes, turning occasionally until fully cooked. If baking, preheat the oven to 190°C (375°F) and bake for about 25-30 minutes.

    Once cooked, let the sudzuk rest for a few minutes before slicing. Serve hot with pita bread, fresh vegetables, or your choice of dipping sauce.
