Preparation of Stuffed Shrimp

Prepare the Shrimp
Peel and devein the jumbo shrimp, leaving the tails on. Make a slit down the back of each shrimp to create a pocket for stuffing.

Make the Filling
In a mixing bowl, combine crab meat, cream cheese, minced garlic, chopped green onions, lemon juice, paprika, salt, and black pepper. Mix until well combined.

Stuff the Shrimp
Gently stuff each shrimp with the crab mixture, ensuring not to overstuff. Secure with toothpicks if necessary.
Cooking the Shrimp

Prepare the Sauce
In a small saucepan, melt butter over medium heat. Add lemon juice, paprika, garlic powder, salt, and black pepper. Stir to combine and let simmer for 2-3 minutes.

Cook the Rice
In a saucepan, combine long-grain rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and water is absorbed.
Serving

Plate the Dish
Serve the stuffed shrimp on a plate with mixed veggies and rice on the side. Drizzle any remaining lemon paprika sauce over the shrimp.
