Chicken Scarpariello Preparation

    Sauté Chicken

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the skillet. Sauté for about 5-7 minutes per side, until golden brown. Remove the chicken from the skillet and set aside.

    Cook Sausage and Vegetables

    In the same skillet, add the sliced sudzuk (or spicy sausage) and cook for about 3-4 minutes until browned. Add the minced garlic and chopped hot peppers, cooking for an additional 2 minutes until fragrant.

    Combine Ingredients

    Return the chicken to the skillet. Add the chopped sun-dried tomatoes, chicken broth, and white wine. Bring to a simmer, cover, and cook for about 25-30 minutes until the chicken is cooked through and tender.

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Potatoes

    In a bowl, toss the halved baby potatoes with the remaining 2 tablespoons of olive oil, salt, black pepper, and chopped rosemary until well coated.

    Roast Potatoes

    Spread the potatoes on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy, tossing halfway through.
