Method

Preparation

  1. 1

    Prepare the Ingredients

Mince the garlic, slice the mushrooms, bell peppers, and onion into thin strips.

  2. 2

    Cook the Pasta

In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

Cooking the Chicken

  1. 3

    Sauté the Chicken

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken breasts with salt and black pepper. Add them to the skillet and sauté for 6-7 minutes on each side, or until cooked through. Remove the chicken from the skillet and set aside.

Making the Sauce

  1. 4

    Sauté the Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic, sliced mushrooms, bell peppers, and onion. Sauté for about 5-7 minutes until the vegetables are tender.

  2. 5

    Add Marinara Sauce

Pour the marinara sauce into the skillet with the sautéed vegetables. Add the dried oregano, and stir to combine. Let the sauce simmer for about 5 minutes.

Finishing Touches

  1. 6

    Combine and Serve

Return the cooked chicken to the skillet, spooning the sauce over the chicken to coat it. Cook for an additional 2-3 minutes to heat through. Serve the chicken pizzaiola over the cooked pasta.
