Cevapi Preparation

    Make the Cevapi Mixture

    In a large bowl, combine the ground beef, ground lamb, grated onion, minced garlic, paprika, salt, black pepper, baking soda, and water. Mix thoroughly until all ingredients are well incorporated.

    Shape the Cevapi

    Wet your hands and take small portions of the mixture, shaping them into small sausages about 10cm long and 2cm in diameter. Place them on a plate.

    Grill the Cevapi

    Preheat a grill or grill pan over medium-high heat. Cook the cevapi for about 10-12 minutes, turning occasionally until they are browned and cooked through.

Pickling Cabbage

    Prepare the Cabbage

    Remove the outer leaves of the cabbage and cut it into quarters. Remove the core and finely shred the cabbage.

    Pickle the Cabbage

    In a large bowl, combine the shredded cabbage with salt. Massage the salt into the cabbage for a few minutes until it begins to wilt. In a pot, bring the water, vinegar, sugar, and black peppercorns to a boil, then pour over the cabbage. Let it sit for at least 2 hours, preferably overnight.

    Prepare Toppings

    Chop the onion and slice the tomato. Crumble the feta cheese. Set aside for serving.

Balkan Bread Making

    Make the Dough

    In a bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the all-purpose flour and salt. Add the yeast mixture and olive oil, and knead until you have a smooth dough.

    Let the Dough Rise

    Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape and Bake the Bread

    Preheat the oven to 220°C (428°F). Punch down the dough and divide it into small balls. Roll each ball into a flat oval shape and place on a baking sheet. Bake for 10-15 minutes until golden brown.
