Preparation

  1. 1

    Roasting the Vegetables

Preheat your oven to 400°F (200°C). Cut the red bell peppers and eggplants in half, and place them on a baking sheet skin-side up. Roast in the oven for about 30 minutes, or until the skins are blistered and blackened.

  2. 2

    Peeling and Chopping

Once roasted, remove the vegetables from the oven and let them cool slightly. Peel off the charred skins from the bell peppers and eggplants. Chop them into smaller pieces and place them in a food processor.

  3. 3

    Adding Garlic

Peel the garlic cloves and add them to the food processor with the roasted peppers and eggplants.

Blending and Seasoning

  1. 4

    Blending the Mixture

Pulse the mixture in the food processor until it reaches a smooth consistency. You can leave it a little chunky if you prefer a textured ajvar.

  2. 5

    Adding Seasonings

While the food processor is running, gradually add in the olive oil, vinegar, salt, and black pepper. Blend until everything is fully combined and the ajvar is creamy.

Finishing Up

  1. 6

    Storing the Ajvar

Transfer the ajvar to a clean jar and let it cool to room temperature. Once cooled, store it in the refrigerator for up to two weeks.

  2. 7

    Serving Suggestions

Serve ajvar as a spread on bread, a dip with vegetables, or as a condiment with grilled meats.
