Pasta Preparation

Make the Pasta Dough
In a large bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into it. Using a fork, gradually incorporate the flour into the eggs until a dough begins to form.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll Out the Pasta
After resting, divide the dough into four pieces. Roll each piece out with a pasta machine or a rolling pin to a thickness of about 1/8 inch. Cut into long strips to form tagliatelle.

Brown the Beef
Increase the heat to medium-high, add the ground beef, and cook until browned, breaking it up with a spoon, about 8-10 minutes.

Add Tomato Ingredients
Stir in the tomato paste and cook for 2 minutes. Add the crushed tomatoes, red wine, beef broth, bay leaves, salt, and black pepper. Bring to a simmer.

Simmer the Ragú
Reduce heat to low and let the ragú simmer uncovered for 1.5 to 2 hours, stirring occasionally, until thickened. Remove bay leaves before serving.
Combine and Serve

Cook the Pasta
In a large pot of salted boiling water, cook the tagliatelle for 2-4 minutes until al dente. Drain and reserve a little pasta water.

Combine Pasta and Ragú
In a large skillet, combine the drained pasta with the ragú. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

Serve
Plate the tagliatelle al ragú to individual bowls, top with grated parmesan cheese, and serve immediately.
