Cheesecake
Prepare the crust
Preheat the oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar for the crust. Mix until well combined.
Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Bake in the preheated oven for 10 minutes, then remove and let cool.
Prepare the filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and continue to mix until well combined. Add the vanilla extract and mix again.
Add eggs
Add the eggs one at a time, mixing on low speed until just incorporated. Do not overmix.
Incorporate sour cream
Gently fold in the sour cream until smooth.
Bake the cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the oven for 50-60 minutes, or until the center is set but slightly jiggly.
Cool the cheesecake
Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour. Then refrigerate for at least 4 hours or overnight.
Strawberry Sauce
Prepare the sauce
In a saucepan over medium heat, combine the sliced strawberries and granulated sugar. Stir until the sugar dissolves and the strawberries begin to release their juices.
Cook the sauce
Add the lemon juice and continue to cook for about 5-7 minutes, until the sauce thickens slightly. Remove from heat and allow to cool.
Serve
Once the cheesecake has set and cooled, slice it and drizzle the strawberry sauce over the top before serving.
