Preparation
Prepare the Marinade
In a small bowl, combine the chopped rosemary, thyme, minced garlic, and lemon zest to create the herb marinade.
Season the Steak
Rub the ribeye steak generously with kosher salt and black pepper on both sides. Then, rub in the prepared herb marinade, ensuring it's well coated. Let it sit at room temperature for 30 minutes.
Cooking
Preheat the Grill
Preheat your grill to high heat (around 450°F to 500°F).
Cook the Steak
Drizzle olive oil over the steak and place it on the hot grill. Grill for about 5-7 minutes per side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy.
Prepare the Sides
While the steak is grilling, boil the halved baby potatoes in salted water until fork-tender, about 15 minutes. Drain and toss with 2 tablespoons of butter and garlic powder.
Sauté the Asparagus
In a large skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the trimmed asparagus and sauté for about 5-7 minutes until tender and lightly charred. Remove from heat and sprinkle with grated Parmesan cheese.
Serving
Plate the Feast
Slice the grilled ribeye steak against the grain and arrange it on a large serving platter. Serve alongside the garlic butter potatoes and sautéed asparagus for a family-style feast.
