Method
Dessert 1: Tiramisu
Prepare the Coffee Mixture
Brew the espresso coffee and let it cool slightly. In a shallow dish, combine the espresso with vanilla extract.
Make the Mascarpone Mixture
In a bowl, combine mascarpone cheese and sugar. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
Assemble the Tiramisu
Dip ladyfinger cookies in the espresso mixture quickly and layer them in a serving dish. Spread a layer of the mascarpone mixture over the ladyfingers. Repeat layers ending with the mascarpone mixture on top. Cover and refrigerate for at least 4 hours.
Serve
Before serving, dust the top with cocoa powder.
Dessert 2: Panna Cotta
Prepare the Gelatin
In a small bowl, sprinkle gelatin powder over 2 tablespoons of cold water and let it bloom for about 5 minutes.
Heat the Cream Mixture
In a saucepan, combine heavy cream, sugar, and the seeds from the vanilla bean. Heat over medium heat until sugar dissolves, but do not boil.
Combine Gelatin and Cream
Remove from heat, stir in the bloomed gelatin until fully dissolved. Add milk and mix well.
Chill the Panna Cotta
Pour the mixture into individual molds or cups and refrigerate for at least 4 hours or until set.
Dessert 3: Cannoli
Mix the Filling
In a bowl, combine ricotta cheese, confectioners' sugar, and vanilla extract. Fold in chocolate chips.
Fill the Cannoli Shells
Using a piping bag, carefully fill the cannoli shells with the ricotta mixture.
Serve
Dust with additional confectioners' sugar before serving.
Dessert 4: Pizzelle
Prepare the Batter
In a large bowl, whisk together flour, sugar, eggs, melted butter, and anise extract until smooth.
Cook the Pizzelle
Preheat a pizzelle maker and pour a small amount of batter onto the center of each mold. Close the maker and cook until golden brown (about 30 seconds).
Cool and Serve
Allow the pizzelle to cool on a wire rack before serving.
