    Prepare the Steak

    Season the ribeye or sirloin steak with salt and pepper. Grill the steak over medium-high heat for about 6-8 minutes per side for medium-rare. Adjust time for desired doneness. Let it rest before slicing.

    Make the Enchiladas

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the shredded chicken and half of the enchilada sauce. Cook until heated through.

    Assemble the Enchiladas

    Soften the corn tortillas in a hot skillet for a few seconds. Spoon the chicken mixture onto each tortilla, sprinkle with shredded cheese, roll them up, and place them seam-side down in a baking dish.

    Bake the Enchiladas

    Pour the remaining enchilada sauce over the rolled tortillas and top with more cheese. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until bubbly and golden.

    Prepare Papas con Chile

    In a separate pot, heat the remaining olive oil. Add diced potatoes, chili powder, cumin, salt, and pepper. Cook until the potatoes are tender and slightly crispy, about 10-15 minutes.
