    Prepare the Filling

    Season the fire-grilled steak or chicken with salt and black pepper. Slice the meat into thin strips. Chop the Anaheim chiles and mix them with the meat and blended cheese in a bowl.

    Assemble the Chimichangas

    Lay a flour tortilla flat and place a portion of the meat and cheese mixture in the center. Fold the sides over the filling, then roll the tortilla tightly from the bottom to the top to form a chimichanga. Repeat with the remaining tortillas.

    Fry the Chimichangas

    Heat olive oil in a large skillet over medium heat. Carefully place the chimichangas in the skillet, seam side down. Fry until golden brown on all sides, about 2-3 minutes per side. Remove from skillet and drain on paper towels.

    Serve

    Plate the chimichangas and serve with sour cream, guacamole, and your choice of chile con queso or ranchera sauce.
